After a lot of experimenting I have finally found my favourite cookie recipe.
To make about 18 or so (I make ‘em quite big):
125g unsalted butter at room temperature
1/2 cup white sugar
1 cup brown sugar (the sticky stuff, not raw)
1 egg
1.5 cups all purpose flour
1 cup cocoa powder (I use Hershey’s)
1 tsp salt
1 tsp bicarbonate of soda
